Recipes: Italian roasted potatoes

Oh, potato. How I love thee. Let me count the ways: potato chips, mashed potatoes, fried potatoes, potato pancakes, hash browns.... The list is never ending, but I’ll spare you.

You get it. Potatoes are pretty much my fave thing ever. Recently, we visited my mother in law’s home for dinner and she made these potatoes that were divine. Crispy, perfectly flavored and melt-in-your-mouth delicious. She ever so kindly shared her recipe with me & I could not believe how simple it was. It’s literally three ingredients to a delicious side dish to complete your evening meal. 

Ingredients

• 4 to 6 Yukon potatoes
• one packet Italian dressing seasoning
• 2 to 3 teaspoons olive oil

Instructions

1. Wash & dice your potatoes into bite size pieces. You don't even have to peel them! Toss them in a baking sheet with olive oil & seasonings to coat. Bake at 400 degrees for 45 minutes to one hour or until golden brown & crispy on the outside.
