One of our contributors, Brooke Cox, of TwoTexasGals.com recently shared her recipe for Taco Ranch Soup that is absolutely divine.
This recipe is simple, & sure to please your family; especially on those chilly weather days. This soup is also quick & easy for those of us with busy schedules or for those in need of a last minute dinner recipe.
INGREDIENTS:
2 15-oz cans of kidney beans
1 15-oz can black beans (rinsed and drained)
2 15-oz cans sweet corn
1 10-oz can Rotel Original
1 lb. ground beef or turkey
1 cup chopped onion
1 packet dry Ranch seasoning
1 packet taco seasoning
TO MAKE:
Brown meat in a large pot till there is no pink. Mix in all other ingredients and let simmer stirring occasionally till bubbly around the edges. Serve! Top with your topping of choice, some tasty suggestions? Shredded cheese, sour cream, crushed tortilla chips, or sliced avocado.
