My kids love pepperoni, in fact, they practically worship it. Straight from the pouch, peeling it from their pizza, inside a pasta salad, wherever they can get to it, it’s a Sosa house favorite. That’s why when brainstorming a new family recipe featuring the zesty snack, I couldn’t whip one up fast enough. Knowing my kids love of pepperoni and carbs (rolls, breads) I dreamt up a savory Pepperoni Cornbread.
Ingredients
• two boxes cornbread mix
• two eggs
• ⅔ cup of milk
• one cup cheddar cheese, shredded
• one cup Hormel Pepperoni, diced
Instructions
1. In a large mixing bowl, combine cornbread mix, eggs, and milk until slightly lumpy.
2. Transfer mixture to lined muffin pan, filling each tin ¾ of the way.
3. Top each muffin with cheddar cheese until gone.
4. Top each muffin with pepperoni until gone.
5. Bake for 20 minutes at 400 degrees or until golden
